Smoked confit chicken with summer corn-heirloom tomato risotto, and chimichurri.
The ingredient list:
- 12 oz. smoked chicken
- 6 oz. heirloom tomatoes
- 1 oz. butter
- 1 oz. Parmesan cheese
- 2 ears of corn

- 3 cups chicken stock
- 3 cloves garlic
- 1/2 shallot
- 1/2 bunch parsley
- 1/2 bunch basil
- 1/2 cup evoo (olive oil)
- Splash of lemon juice
- Salt to taste
